Baby Fudgey Bars

Say hello to Baby Fudgey Bars! Your new best friend when you need a boost of energy or just a taste of something sweet! This is the little cousin to my signature Best Ever Chocolate Protein Bars but with a few fun twists. Same nutrients and intense chocolate flavor minus the oats (yes grain-free!) plus the addition of walnuts and mood-boosting cacao nibs cut into bite-sized tiny squares!!

INGREDIENTS

Makes 40 Mini Bars

1½ cups fresh dates, packed & pitted (If dates are not soft, soak in warm water for 5 minutes)
1 cup cashews
½ cup walnuts
¼ cup unsweetened shredded coconut
¼ cup all natural sweetened plant-based chocolate protein powder
⅓ cup unsweetened cocoa powder or raw cacao powder
1½ tablespoons coconut oil, softened but not liquified
1 teaspoon vanilla extract
¼ teaspoon sea salt
2 tablespoons cacao nibs
OPTIONAL: 1 to 2 tablespoons hemps seeds for extra mood-boosting benefits!

METHOD

Line a 9 x 5 inch loaf pan with parchment or wax paper.

Combine the dates and warm water in a small bowl if necessary to soften. Let stand for about 5 minutes until dates are soft. Remove water and pat dry with paper towels.

Place the cashew and walnuts in a food processor and process until finely chopped. Add the dates, protein powder, cocoa powder, melted coconut oil, coconut, vanilla and salt. Process until the dates are finely chopped and blended and the mixture begins to stick together. Pulse in the cacao nibs until well-combined. Transfer the mixture to the lined loaf pan. Use parchment paper or wax paper on top of the bar mixture to pack and flatten the mixture evenly in the pan; leave the paper to cover. Refrigerate 1 hour or more until firm. Using the edges of the paper liner, lift the mixture from the pan and uncover. Cut down the center lengthwise and then cut across into 10 large squares. Slice each large square into four little baby bites. Pop one in your mouth whenever you need a quick boost in energy!

Store in the refrigerator up to 5 days or freeze to have on hand ALWAYS.
