Creamy Sweet Potato Smoothie

Don’t skip those nutrient-dense smoothies just because it’s cold outside! Winterize your blends with warming anti-inflammatory spices and grounding root veggies! INGREDIENTS

6 ounces unsweetened almond milk (adjust liquid to desired thickness)
½ cup cooked sweet potato, peel removed*
1 small banana, sliced & frozen
½ cup cooked cauliflower, cold or frozen (it’s tasteless!)*
1 tablespoon almond butter (cashew butter or sunflower butter work, too)
½-1 teaspoon fresh grated ginger root
½-1 teaspoon grated fresh turmeric
1/4 teaspoon cinnamon to taste
drop of vanilla
Pinch of sea salt

For additional protein, add a scoop of vanilla plant-based powder and omit the drop of vanilla.

Note: To easily whip up a smoothie, precook the sweet potato and cauliflower ahead of time. Use any variety of sweet potato or yam.

METHOD

Place the nut milk and sweet potato in a high-speed blender and blend until smooth. Slowly add the remaining ingredients and adjust liquid according to desired thickness.

For a bowl, start with less liquid. Add additional nut milk for a smoothie in a glass. Sprinkle with toppings of choice such as hemp seeds, granola, goji berries, pecans, and/or dried cranberries. Dig in!
