Lemon Love Smoothie
Pucker up! This sweet + tangy smoothie is made for sipping. Filled with antioxidants and also anti-inflammatory spices, the bright and light blend will give your body a big old dose of plant-powered TLC. If you love lemon, toss in the entire fruit for a little more punch and Vitamin-C, of course!
INGREDIENTS
½-1 cup nut milk (use less for a thicker consistency)
½ cup cauliflower, steamed and frozen
2 tablespoons lemon juice (or use the whole lemon, peeled)
1 teaspoon lemon zest
1-inch slice of ginger, peeled
2-3 tablespoons cashews, soaked
1 tablespoon coconut butter
1 banana, sliced and frozen ahead of time*
½ teaspoon vanilla
pinch of sea salt
Top with lemon zest, coconut, hemp seeds, granola, and/or a nut butter drizzle
*Variation: Replace the banana with about 1½ cups of frozen peaches for a lighter and lower glycemic smoothie.
Note: For additional protein add in a scoop of your favorite plant-based protein.

METHOD
Place the nut milk and frozen cauliflower in the blender and blend until smooth. Add the remaining ingredients and blend again until silky smooth & creamy. Pour into a glass and sprinkle additional zest or any other nutritional boosts on top. Sip and savor your sunny creation!
