Matcha, Turmeric, and Maqui Layered Chia Parfait

Layer matcha, turmeric, and maqui powder into the chia seed mix for a nutrient-dense parfait loaded with superfoods on top of superfoods. This is next level nutrition that happens to be mood-boosting, energizing, and insanely delicious!

INGREDIENTS

Serves 2

½ cup chia seeds
2 cups plant-based milk (almond, cashew, hemp, coconut)
3 tablespoons pure maple syrup
½ teaspoon pure vanilla extract
pinch of sea salt

Additional ingredients

1 teaspoon matcha tea powder
1 teaspoon lemon zest
1-2 teaspoons fresh turmeric, grated (or ¼ teaspoon dried turmeric)
1-2 teaspoons maqui powder
¼ cup mashed blueberries (fresh or frozen)

METHOD

Pour the chia seeds, plant-based milk, maple syrup, vanilla, and sea salt into a bowl and stir until well combined. Allow the mixture to settle for about 20 minutes, whisking every 5 minutes until the pudding thickens. Cover and place the bowl in the refrigerator for at least one hour or overnight. Once the mixture has thickened, remove it from the refrigerator. Divide the pudding evenly into three separate bowls to create the different variations. Use these suggestions as inspiration to create your own combinations.

Matcha Chia Seed Pudding: Add 1-2 teaspoons matcha tea powder. Mix well.
Lemony Turmeric Chia Seed Pudding: Add 1 teaspoon lemon zest and 1-2 teaspoons fresh turmeric or ¼ teaspoon ground. Mix well. (Adjust to taste.)
Maqui Blueberry Chia Seed Pudding: Add 1-2 teaspoons maqui powder and ¼ cup mashed blueberries (fresh or thawed frozen). Mix well.

Spoon a layer of each flavor into two separate glasses or jars and then top each parfait with fresh berries. Enjoy the chia seed pudding as a breakfast, midday snack, or satisfying dessert! Store any unused pudding in the refrigerator for up to 3 days.
