Mint Chip Ice Cream Smoothie

If you loved mint chip ice cream as a kid, then you are going to freak out over this nutrient-dense but scrumptious version. Who knew that  a smoothie thick enough to be soft serve ice cream (but made with hidden greens from spinach & avocados) could remind us of one of our favorite childhood treats. You have to taste it to believe it!

INGREDIENTS

1 cup unsweetened almond, cashew or coconut milk
4 cups spinach leaves (can use half kale and half spinach)
1 avocado, pitted and peeled
3-4 medjool dates, pitted
1 teaspoon pure vanilla extract
8 sprigs of fresh mint leaves (or ½ teaspoon mint extract if fresh mint is not an option)
2 large frozen ripe bananas, sliced & frozen
pinch of sea salt
2 tablespoons cacao nibs or dark chocolate chips
Optional: 1 teaspoon spirulina

GARNISH

Fresh mint  sprigs (optional)
A sprinkling of shaved chocolate, chocolate chips or cacao nibs

Note:
For one serving, keep pit in the unused avocado half to prevent it from turning brown before consuming.

METHOD

Place plant-based milk and greens in a high-speed blender and blend. Add pitted dates and mint leaves and blend. Toss in the remaining ingredients (except chocolate chips or cacoa nibs) and blend until mixture is smooth, thick, and creamy.  Use a spoon and mix in cacao nibs/chocolate chips, then dish into individual servings. Garnish with shaved chocolate or cacao nibs and a fresh mint sprig. Enjoy!
