Mood-Boosting Matcha Smoothie

INGREDIENTS

1 cup plant-based milk (almond, cashew, coconut, hemp)
1 scoop vanilla plant-based protein
1 teaspoon matcha
1 probiotic capsule emptied or probiotic powder (optional)
8 sprigs of fresh mint (¼ teaspoon mint oil or extract if fresh not available)
1 cup loosely packed spinach (optional for extra greens)
1 small zucchini, pre-cooked and frozen (Can also use raw. Best frozen!)
½ cup cauliflower, pre-cooked and frozen
¼ avocado
1 large banana, sliced and frozen
pinch of salt
1 tablespoon cacao nibs + more to top

METHOD

In a high-speed blender, blend the nut milk, plant-based protein, matcha, probiotic, and mint until smooth. Add in the frozen zucchini and frozen cauliflower and blend again.

Slowly add the remaining ingredients (except the cacao nibs) and adjust liquid according to desired thickness. Blend until completely smooth and creamy. Add in the cacao nibs and pulse.

Pour into a glass or bowl and sprinkle with extra cacao nibs or any nutritional boosts of choice. Dig in!
