Orange Spice Bliss Balls

Get ready for a sweet burst of energy with zest + zing! Because when orange, ginger, cinnamon, cardamom, and vanilla get together, it’s a Vitamin-C packed and immune-boosting party in a {bliss} ball!

INGREDIENTS

Makes 20 balls

1 cup almonds (cashews work great, too!)
1 packed cup Medjool dates, pitted
½ cup unsweetened shredded coconut, plus more to roll in
3 tablespoons juice from a fresh orange
1 tablespoon freshly grated ginger (can substitute 1 teaspoon dried if fresh not available)
¾ teaspoon cinnamon
pinch of cardamom (optional)
½ teaspoon vanilla
½ teaspoon sea salt
1 tablespoon orange zest
extra coconut for rolling

METHOD

Place the nuts in a food processor and pulse until crumbly, but not completely smooth. Next, add the remaining ingredients except for the orange zest. Process until the mixture is well-combined. Add in the zest and pulse for about 30 more seconds until all the ingredients are incorporated. (It will be sticky.) If the mixture is too sticky to handle, place in the freezer for about 15-20 minutes until firm enough to roll. Using a small spoon, scoop out the mixture and roll into bite-sized morsels (about 1-inch), forming with your hands! Roll each bliss ball in coconut. Place in the refrigerator for at least an hour before serving. Store any remaining bliss balls in an airtight glass container up to 3 days in the refrigerator or freeze for one month.
