Peaches & Greens Salad

If you’ve been around here for a while, then you know I’m a big fan of quick and easy (but nutrient-dense) salads. This summery plant-powered creation can be tossed together in a matter of minutes, so you can spend less time in the kitchen and more time outside soaking in the sunshine!

INGREDIENTS

Serves 4

LEMONY VINAIGRETTE
¼ cup olive oil
¼ cup lemon juice
1 tablespoon Dijon mustard
1 tablespoon minced shallots
2 teaspoons maple syrup
Sea salt & pepper to taste

SALAD
8 cups salad greens (use any combination of baby lettuces, arugula, or spicy greens)
¼ cup fresh mint leaves 
¼ to ½ cup pre-cooked quinoa (can omit for a lighter salad)
1 cup raspberries
2 large firm (but ripe) peaches or nectarines, sliced
¼ red onion, sliced
1 large avocado, sliced or cubed
¼ cup sliced almonds, roasted

METHOD

Prepare the Lemony Vinaigrette by whisking together all the ingredients in a small bowl. Set aside.

In a large bowl, add the greens and mint leaves. Next, toss in the quinoa. Add the raspberries, sliced peaches, sliced onions, and avocado to the bowl. Top with the almonds and additional salt + pepper if desired. Drizzle dressing, mix, and serve immediately.
