Peachy Keen Smoothie Bowl
Nothing screams summer more than perfectly ripe peaches. This blended creation adds in plant-based protein and mood-boosting hemp seeds to keep your blood sugar steady and your mind happy any time of day!
INGREDIENTS
Serves 1
½-1 cup plant-based milk (Start with less and add to desired consistency.)
1 heaping tablespoon hemp seeds + extra to garnish
1 tablespoon coconut butter (or almond butter!)
1 cup peaches, sliced and frozen (Thaw for about 10 minutes for maximum flavor.)
½-1 banana, sliced and frozen
½ cup cauliflower, frozen (precooked)
½ teaspoon vanilla
½-inch piece of fresh ginger (optional)
1 scoop vanilla plant-based protein powder (Optional, omit vanilla if using.)
pinch of sea salt
Top with fresh sliced peaches, shredded coconut, hemp seeds, and/or granola
VARIATIONS: For a lighter version, use coconut water instead of plant-based milk. For additional nutrients, toss in a handful of your favorite greens.

METHOD
Blend the nut milk with the hemp seeds and coconut (or almond) butter to a creamy consistency. Add in the remaining ingredients and blend again until smooth, adjusting thickness to desired consistency. Pour into a bowl and top with additional nutritional boosts. Dig in!
