Red Velvet Hot Cocoa
Add a pop of radiant red to your cozy hot cocoa with a hidden veggie! High in nutrients with a slightly earthy flavor, nobody will know the secret to naturally create such a beautiful (and energizing) warming drink. Serve with a dollop of coconut cream or a dollop of coconut whipped cream for an extra satisfying and decadent treat!
INGREDIENTS
Makes 1 large mug
12 ounces plant-based milk
3 tablespoons beet, grated (use cooked beet for a milder flavor)*
1½ tablespoons raw cacao or cocoa powder
Splash of vanilla
½ teaspoon cinnamon
1 tablespoon maple syrup or sweetener of choice
Pinch of salt
Toppings: A heaping spoon of coconut cream, coconut butter, or coconut whipped cream (optional but recommended for depth of flavor and maximum nutrient absorption)
grated chocolate or cacao nibs
sprinkle of cinnamon
Optional Add-Ins:
Maca root (for hormone balance or extra energy)
Ashwagandha (for stress support)

METHOD
Add all ingredients to a high speed blender and blend until smooth. Pour through a fine mesh strainer before adding the mixture to a small pot or saucepan. Gently warm over medium heat (do not boil), whisking several times while heating. Once warmed, pour into a large mug and check for desired sweetness. Stir in the coconut butter OR top with the coconut cream or whipped cream. Add shaved chocolate, raw cacao nibs, and a sprinkle of cinnamon for a cozy drink that can’t be BEET!
*To cook the beet: It’s best to make ahead of time. Place the beet in a pot with enough water to cover. Bring to a boil, reduce heat, and simmer until tender for about 35-40 minutes or until the beet can be pierced with a fork. Drain the water, then rinse under cold water. Once cooled, the skin can be easily removed. Grate with a box grater and place the remaining beet in the refrigerator for up to 3 days.
