Seeded Almond Flour Bread

This homemade gluten-free and grain-free almond flour loaf is loaded with protein and nutrients that you won’t find in other breads. Slather on the nut butter and all fruit jam for a modern take on PB & J or simply enjoy it by the slice with your favorite soup or salad. It’s as easy to make as it is to eat.

INGREDIENTS

Makes one loaf (about 12 slices)

Olive oil or coconut oil for greasing the loaf pan
2½ cups almond flour
¼ teaspoon baking soda
½ teaspoon salt
3 large eggs
1 tablespoon maple syrup or raw honey
1 teaspoon apple cider vinegar
2 tablespoons mixed seeds (pumpkin and sunflower seeds best)

METHOD

Preheat the oven to 300 degrees. Use a small amount of oil to grease a 9×5-inch loaf pan. In a medium bowl, mix together the almond flour, baking soda, and salt. In separate small bowl, whisk the eggs, maple syrup, and vinegar together. Once blended, add the egg mixture to the dry ingredients. Pour the mixture into the prepared loaf pan and sprinkle the seeds on top. Bake for 45 minutes or until golden on top and brown around the edges. Let cool before serving. Enjoy!
