Strawberries & Cream Smoothie Parfait
Get ready for a {pretty} parfait that takes your blended meal to the next level in nutrition and flavor. Filled with antioxidants, hidden veggies for maximum creaminess, and a dose of plant-based protein, spring smoothies never tasted (or felt!) so good.
INGREDIENTS
Serves 2
For the creamy vanilla layer:
1 cup nut milk (cashew, almond, or coconut milk)
2 tablespoons raw cashews
½ cup precooked and frozen cauliflower
1 large banana, sliced & frozen
½ teaspoon vanilla
Pinch of sea salt
For the strawberry layer:
1 cup cashew milk (coconut or almond work, too)
2 tablespoons raw cashews
1 cup frozen strawberries*
½-1 banana, sliced & frozen
½ cup precooked and frozen cauliflower
½ teaspoon vanilla
1 teaspoon lemon zest (don’t skip this!)
Pinch of sea salt
*Organic is best as strawberries are the number one pesticide contaminated produce in EWG’s Dirty Dozen.
Optional: for additional protein, add in one scoop of vanilla protein powder.

METHOD
For the creamy vanilla layer: Add the nut milk and cashews to the blender first and blend until smooth. Toss in the cauliflower, banana, vanilla, and pinch of salt and blend until creamy. Use additional nut milk to blend, if necessary. Divide the mixture evenly into two glasses or jars.
For the strawberry layer: Add the nut milk and cashews to the blender and blend until smooth. Toss in the frozen cauliflower, strawberries, banana, lemon zest, vanilla, and pinch of salt. Use additional nut milk to blend, if necessary. Once smooth and creamy, pour the mixture on top of the vanilla layer and top with coconut and additional berries or toppings of choice. Cheers!
