Watermelon Burst Popsicles

This recipe allows lots of room for flexibility. You can use more or less of the liquids or fruit depending on whether you prefer a smoother or chunkier popsicle. Add in any fruit that’s in season. Think: pineapple, peach, blackberries, blueberries, or nectarines in addition to the fruit listed in the recipe. Be creative and mix & match different combinations and flavors. Enjoy this fun activity with your kids or on your own to satisfy the kid in all of us!

INGREDIENTS

Makes approximately 8 pops

4 cups seedless watermelon
2 tablespoons lime juice
Pinch of sea salt
1 cup mango, cubed
1/2-1 cup strawberries, sliced
1 kiwi, sliced

4 cups seedless watermelon
2 tablespoons lime juice

1 cup mango, cubed

METHOD

In a blender combine watermelon, lime juice, and sea salt until smooth. Place a handful of berries/cut up fruit in the bottom of each popsicle mold filling about two thirds of the way. Next, fill the mold with watermelon juice a little more than 3/4 of the way. Place in freezer for 45 minutes or until slushy, then drop in more fresh fruit and insert wooden sticks into the popsicles. Freeze for 4 hours or overnight.

To unfreeze the ice pops, insert the molds in hot water for 5 to 10 seconds. Enjoy immediately & share with all the neighborhood kids.
