Flourless Garbanzo Bean Brownies

Although it is pretty sneaky to slip some legumes into a chocolate treat, somehow the garbanzo beans seem to fit right in without being noticed. The added fiber and protein make this version a little healthier than the classic brownies. This recipe is exceptionally easy to make! Serve with fresh berries for an extra nutritional boost.

INGREDIENTS

2 cups garbanzo beans, rinsed & dried (if using canned, use BPA free)
1½ cups of semisweet chocolate chips
4 eggs
1 cup coconut sugar (lower glycemic alternative to white sugar)
½ teaspoon baking powder
1 teaspoon pure vanilla extract
½ teaspoon sea salt

METHOD

Preheat oven to 350 degrees.

In a small pot, melt chocolate chips over low heat to a soft consistency. In a blender, combine beans and eggs. Add the coconut sugar, baking powder, salt and melted chocolate and blend until smooth and creamy. Coat an 8×8 inch pan with coconut oil and pour the mixture into the pan.

Bake for 340-45 minutes. Enjoy!
