Pretty In Pink Smoothie Bowl
Talk about color therapy! Filled with superfoods, greens, plant protein, and healthy fat too, it’s a nutrient-dense (and colorful) party in your smoothie bowl! Pitaya, otherwise known as dragon fruit, is not only a vibrant pink hue, but it’s also loaded with omegas and phytonutrients. Blend it all together for a next level creation that FEELS as good as it tastes!
INGREDIENTS
¼ large avocado
1 scoop vanilla plant-based protein or collagen
1 package frozen Pitaya (dragon fruit)
½ cup cauliflower, pre-cooked and frozen (optional)
½ cup frozen raspberries (or more!)
½ large banana, sliced and frozen
pinch of salt
2 teaspoons cacao nibs
TOPPING OPTIONS:
hemp seeds
shredded coconut
cacao nibs
fresh berries
edible roses

METHOD
In a high-speed blender, blend the nut milk, avocado, and greens until smooth. Slowly add the remaining ingredients (except the toppings) and adjust liquid according to desired thickness. Blend until completely smooth and creamy. Add in cacao nibs and pulse. Pour into a glass or bowl and sprinkle with nutritional boosts of choice. Dig in and watch your energy and spirits soar!
