Quinoa with Dried Fruits & Nuts
Filled with plant-based protein, this colorful quinoa dish has just a hint of spice and lots of flavor. The dried fruit adds a drop of sweetness (and nutrients!) while the nuts add crunch and healthy fat . This is my go-to dish for entertaining. Enjoy!
INGREDIENTS
Serves 8
1 cup raw quinoa
2 cups water
1 garlic clove
2 limes, zested
¼ cup lime juice
2 tablespoons green onion, finely chopped
½ jalapeño pepper, seeded and finely chopped
½ teaspoon cumin seeds
½ teaspoon coriander seeds
¼ teaspoon dry mustard
⅓ cup olive oil
3 tablespoons cilantro, finely chopped (can use parsley instead)
1 large red, yellow or orange bell pepper, finely chopped
8 dried apricots, finely chopped
½ cup dried cherries or cranberries
½ cup toasted pine nuts
2 tablespoons green onions, chopped (for dressing)
1 teaspoon sea salt or to taste

½ teaspoon coriander seeds
¼ teaspoon dry mustard
⅓ cup olive oil

1 large red, yellow or orange bell pepper, finely chopped
8 dried apricots, finely chopped
½ cup dried cherries or cranberries
½ cup toasted pine nuts
2 tablespoons green onions, chopped (for dressing)
1 teaspoon sea salt or to taste
METHOD
Rinse the quinoa in a bowl of cold water. Bring the water for the quinoa to a boil in a small saucepan. Season the water with salt. Add the quinoa, reduce heat to low, cover and simmer for 15 minutes or until the water is fully absorbed. Let the quinoa stand for 30 minutes or until cooled.
While the quinoa is cooling, combine the ingredients for the salad dressing (garlic, lime zest, and juice, green onion, jalapeño pepper, cumin, coriander, dry mustard) in a bowl. Next, slowly whisk in the olive oil to form an emulsion. Toss the cooked quinoa with a ¼ cup of the dressing in a large bowl.
Add the dried fruits and pine nuts. Add enough of remaining dressing to coat the mixture. Season with the salt to taste. Serve as a side dish or use it as a bed for an entrée. Enjoy!
