Beet Coconut Ginger Self-Love Soup
This recipe is an excerpt from my friend Sue Van Raes’ book, Food and Freedom. She was also a guest on my podcast sharing how we all can find our personal formula to feeling good in our minds and bodies.
Beyond being chock-full of phytonutrients, nitric oxide, and antioxidants, beets have been shown to boost serotonin levels, improve mood, and heighten feelings of pleasure. Who doesn’t need that?
INGREDIENTS
Serves 4
1 tablespoon olive oil
1 medium onion, coarsely chopped
4 large beets, peeled and coarsely chopped
1 carton (32 ounces) vegetable broth (organic if possible)
1-inch piece fresh ginger, grated
1 can (13.5 ounces) coconut milk
Salt to taste
Microgreens, chives, or parsley for garnish

1 tablespoon olive oil
1 medium onion, coarsely chopped
4 large beets, peeled and coarsely chopped
1 carton (32 ounces) vegetable broth (organic if possible)

Salt to taste
Microgreens, chives, or parsley for garnish
METHOD
In a stockpot, heat the oil. Add the onion and saute until translucent. Add the beets, the broth, and the ginger so that all the veggies are covered, plus about 1 extra inch of liquid. Cover and simmer for 7 to 10 minutes, or until the beets are soft. Be sure to stir in some self-love, self-compassion, and heart!
Puree with an immersion or countertop blender in stages until smooth. Add the coconut milk
and stir until well mixed, watching the most beautiful color pink emerge. Add salt to taste. Garnish with fresh microgreens, chives, or parsley. Enjoy this soothing soup!
