Berry Chia Pudding Parfait

I’m a huge fan of parfaits with smoothies and chia seed pudding together! By adding chia seed pudding in with a smoothie, not only do you mix it up different tastes and textures, but you also get a big serving of omega 3s, which have amazing health benefits and can help stabilize blood sugar. As long as you prep the chia seed pudding in advance, you only need a few minutes to put together a nutritious & delicious parfait. Use this recipe with the flavors of raspberries, lemon zest and a touch of vanilla as inspiration to learn the simple art of parfait making and then create your own variation. Enjoy!

INGREDIENTS

Serves 2

Berry Smoothie Base layer
1 cup frozen raspberries (or any berries)
1 banana, sliced & frozen (or replace banana with an additional ½ cup berries)
6 ounces almond milk (can use coconut milk)
Pinch of sea salt

Zesty Chia Seed Pudding
¼ cup chia seeds
1 cup plant-based milk (almond, hemp, coconut)
1½ tablespoons pure maple syrup
½ teaspoon pure vanilla extract
1 teaspoon lemon zest
Pinch of sea salt

Toppings
Fresh berries
Mint leaf (optional)
Add any other fruit

Note:
To make a single parfait, use half the base layer and store any remaining chia seed pudding in the refrigerator for up to 4 days.

METHOD

Prepare the chia seed pudding in advance: Pour all ingredients into a bowl. Stir until well combined. Allow to sit for 30 minutes whisking every 10 minutes until mixture thickens. Place in refrigerator and store for several hours or overnight.

Blend the smoothie ingredients until it resembles a soft serve consistency. Scrape down the sides of the blender if need be and add a drop more liquid to create a smooth texture if necessary. It should be very thick. Once smooth, pour the berry mixture into two wide mouth mason jars or glasses. Add the prepared chia seed pudding as the next layer and then top with fresh fruit or any other nutritional boost. Eat & enjoy immediately!
