Chili-Lime Chicken with Fruit Salsa

INGREDIENTS

2 limes, juiced and divided
1 tablespoon olive oil
1 tablespoon mild flavored honey
1 large clove garlic, minced
1½ teaspoons chili powder, divided
½ teaspoon sea salt
4 boneless skinless chicken breast halves

2 limes, juiced and divided
1 tablespoon olive oil
1 tablespoon mild flavored honey

1½ teaspoons chili powder, divided
½ teaspoon sea salt
4 boneless skinless chicken breast halves
METHOD
In a medium bowl, whisk together 2 tablespoons lime juice, oil, honey, garlic, chili powder and salt. Pour into shallow dish for marinating. Add chicken breasts and toss well to coat. Chill 4 hours or overnight, turning at least once. Heat grill to medium-high. Remove chicken from marinade; discard excess juices. Grill chicken approximately 12 minutes or until internal temperature of 170 degrees, turning once. Transfer to platter; let stand at least 5-10 minutes before slicing into strips. Serve with Fruit Salsa.
FRUIT SALSA
INGREDIENTS
8 strawberries, diced
½ avocado, pitted and diced
½ large mango, cubed
½ small white onion, diced (about ⅓ cup)
1 tablespoon finely chopped cilantro
½ teaspoon chili powder
Himalayan salt to taste
METHOD
In a small bowl, toss together strawberries, mango, avocado, onion, cilantro and remaining lime juice and chili powder. Season with salt. Enjoy!
