Chocolate Cherry Overnight Oats

This nutrient-dense breakfast tastes and looks like dessert in a jar. Filled with mood-boosting ingredients, the combination of cherries, raw cacao, and oats will leave your mind + body happy all morning long!

INGREDIENTS

Serves 1

½ cup cherries, pitted and chopped (If using frozen, thaw first)
½ cup oats (gluten-free if necessary)
½ cup plant-based milk
1 tablespoon cocoa or cacao powder
1 tablespoon flax meal*
¼ teaspoon almond extract
2 to 3 teaspoons maple syrup (or to taste)
Pinch of salt
Toppings: fresh cherries and dark chocolate chips

METHOD

In a small bowl, mash the thawed frozen or fresh cherries with a fork. Set aside. Add the remaining ingredients to a separate bowl or mason jar and stir until well-combined. Mix in the cherries, cover, and place in the refrigerator for four hours or overnight. Before eating, stir the mixture, add more plant-based milk if desired, and top with fresh cherries and dark chocolate chips (optional). Enjoy!

NOTE: Swap out the flax meal + almond extract with a tablespoon of almond butter for a heartier take on these overnight oats.
