Creamsicle Chia Pudding Parfait

Reminiscent of the classic childhood Creamsicle but without any of the refined sugars or artificial flavor and coloring. Bonus that you get a megadose of vitamin C and omega fatty acids in each delicious bite!  Prep the chia seed pudding in advance, and then put together this nutritious & tasty parfait in a matter of minutes. Enjoy!

INGREDIENTS

Serves 2

Creamsicle Smoothie Base layer
1 large fresh orange, peeled
6 kumquats, sliced and seeds removed  (optional but adds tartness and vitamin C!)
1 banana, sliced & frozen
½ teaspoon pure vanilla extract
6 ounces plant-based milk (for a lighter base, use coconut water or maple water)
pinch of sea salt

*NOTE: replace the citrus with peaches for a Peaches and Cream Parfait!

Vanilla Chia Seed Pudding with Orange Zest
¼ cup chia seeds
1 cup plant-based milk (almond, hemp, coconut)
1½ tablespoons pure maple syrup
½ teaspoon pure vanilla extract
1-2 teaspoons orange zest
pinch of sea salt

Toppings
fresh orange slices and/or berries
orange zest
mint leaf (optional)
any other fruit

Note:
To make a single parfait, use half the base layer and store any remaining chia seed pudding in the refrigerator for up to 4 days.

METHOD

Prepare the chia seed pudding in advance: Pour all ingredients into a bowl. Stir until well combined. Allow to sit for 30 minutes whisking every 10 minutes until mixture thickens. Place in refrigerator and store for several hours or overnight.

Blend the smoothie ingredients until it resembles a soft serve consistency. Scrape down the sides of the blender if need be and add a drop more liquid to create a smooth texture if necessary. It should be thick and very smooth. Add the prepared chia seed pudding as the base layer to two wide mason jars or glasses. Pour the creamsicle mixture as the next layer (or use it as the base layer and the chia seed pudding next) and then top with fresh fruit or any other nutritional boost. Enjoy!
