Dessert Chia Pudding
When you’re craving sugar after dinner (or anytime!) and just need a little something, satisfy your sweet tooth naturally with this dessert chia pudding! Same nutrients as the original version but extra creamy + more decadent!
INGREDIENTS
Serves 4
1/4 cup shredded coconut
1 can full-fat coconut milk (room temperature)
1/4 cup coconut water
1/2 teaspoon vanilla
pinch of sea salt
1/2 cup chia seeds
sweetener of choice (doesn’t need much!)
Toppings of choice: fresh berries, cacao nibs, lemon zest, and/or shaved chocolate

1 can full-fat coconut milk (room temperature)
1/4 cup coconut water
1/2 teaspoon vanilla
pinch of sea salt
1/2 cup chia seeds
sweetener of choice (doesn’t need much!)
Toppings of choice: fresh berries, cacao nibs, lemon zest, and/or shaved chocolate
METHOD
Blend first 5 ingredients. Add chia seeds to a jar and pour in the blended mixture. Cover and shake. Place in the refrigerator for 2 hours or overnight. Divide into 4 servings, add toppings, sweeten as desired. Dig in!
