Guilt-Free Banana Bread

Most banana breads are filled with sugar, butter and white flour. This gluten free and refined sugar free treat is decadent & delicious. With quinoa flour (high in protein), coconut sugar (lower glycemic index than refined sugar), and coconut oil (healthy fat that has a natural antiviral and anti-microbial component), it still tastes like it’s full of sinful ingredients even though it’s not!

INGREDIENTS

1½ cups quinoa flour
½ cup coconut sugar
1 teaspoon baking soda
1 teaspoon aluminum free baking powder
½ teaspoon cinnamon
½ teaspoon sea salt
4 large ripe bananas, mashed
1 egg (*or use 1 flax egg for a vegan version)
¼ cup coconut oil, softened
½ – ¾ cup dark chocolate chips (or use walnuts instead)

*To make a flax egg, mix 1 tablespoon flax meal (ground flax seed) with 2.5 tablespoons of water. Mix well and let it stand for 5 minutes before adding into the other ingredients.

METHOD

Preheat oven to 350 degrees. Mix quinoa flour, coconut sugar, baking soda, baking powder, cinnamon and sea salt in a medium bowl. Set aside. In a large bowl add mashed bananas, egg (or flax egg), coconut oil and mix until well combined. Next, add the dry ingredients to the wet ingredients and stir well (it may seem clumpy and dry). Once mixed, pour in the chocolate chips (or nuts) and combine. Grease a 9×5 inch loaf pan with coconut oil. Bake for 45 minutes until golden brown around the edges and a toothpick inserted in the center comes out clean. Enjoy!
