Healthy Apple Crisp

A personal favorite here at the Museles house, this recipe got a nutritional upgrade and has evolved into a delicious & nutritious comfort food. This version is packed with whole grain goodness, healthy fats and lower glycemic sweeteners. Top with coconut (non-dairy ice cream) for a really satisfying and decadent treat.

INGREDIENTS

Serves 8

FILLING:
8 cups organic apples, peeled and thinly sliced
¼ cup pure maple syrup
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

TOPPING:
1 cup old-fashioned oats (gluten free if necessary)
⅓ cup coconut sugar
⅓ cup whole grain gluten free flour (I like Bob’s Red Mill)
¼ cup chopped pecans
1 teaspoon ground cinnamon
1 teaspoon salt
4 tablespoons softened coconut oil

METHOD

Preheat oven to 375 degrees. Lightly grease an 8-inch square glass baking dish or 9-inch pie plate with coconut oil. In a large bowl, toss the apple slices with maple syrup, lemon juice, vanilla extract, and cinnamon. Spread evenly in the baking dish. Next, prepare the topping by mixing the oats, coconut sugar, flour, pecans, cinnamon, and salt. Add the coconut oil and stir until moistened. Spread the mixture over the prepared apples. Bake for approximately 40 minutes (or until the fruit is tender). Remove from the oven and let the crisp rest for 20 – 30 minutes. Enjoy!
