Herbed Brown Rice
There is something just so basic and simple about brown rice. While complimenting almost any main dish, the satisfying taste and texture make it an old favorite to keep in your repertoire.
INGREDIENTS
Serves 4-6
2 tablespoons olive oil or canola oil
½ onion, finely chopped
1 cup long-grain brown rice
2 cups vegetable stock
1 bay leaf
2 fresh thyme springs
1 tablespoon salt
1½ teaspoons freshly ground pepper

METHOD
Heat oil in a saucepan. Add onion and sauté until soft. Add rice and fresh herbs to onion and oil. Mix well. Pour broth over the onion, herbs, and rice. Bring to a boil. Reduce heat, cover the rice, and simmer for 40 minutes (check rice package for cooking time.) Remove saucepan from heat and let sit an additional 5 minutes. Fluff with a fork. Serve warm.
