Honey Roasted Chicken
This simple chicken dish is perfect for those nights when the weather just won’t cooperate and grilling outdoors is out of the question. Just turn on the oven and with some minimal effort, you have an elegant and easy to prepare main course.
INGREDIENTS
Serves 8
8 chicken breasts, with ribs
½ cup honey
¼ cup low sodium soy sauce
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 tablespoon fresh rosemary
2 – 4 garlic cloves, minced
1 shallot, minced

METHOD
Preheat oven to 375 degrees. Arrange chicken on a sheet pan in a single layer. Season with salt and pepper. Combine honey, soy sauce, Dijon mustard, olive oil, garlic, and shallot in a food processor or blend with an immersion blender. Brush mixture on chicken. Roast chicken for 15 minutes. Remove from oven and baste with additional sauce. Roast for 15 more minutes or until chicken breasts reach an internal temperature of 170 degrees. Garnish with rosemary sprigs and serve immediately.
