Kumquat Vinaigrette
Brighten up any salad with this gorgeous colorful kumquat vinaigrette. The combination of sweet and tart citrus mixed with shallots and crushed red pepper flakes blends into dressing perfection in taste, texture and nutrition. Enjoy!
INGREDIENTS
Serves 4
1 tablespoon shallot, minced
12 kumquats, sliced & seeds removed
2 tablespoons water
2 tablespoons juice from half an orange
1 teaspoon maple syrup (optional but recommended)
½ teaspoon sea salt
¼ teaspoon ground black pepper
½ cup olive oil
¼ teaspoon crushed red pepper flakes

12 kumquats, sliced & seeds removed
2 tablespoons water
2 tablespoons juice from half an orange
1 teaspoon maple syrup (optional but recommended)
½ teaspoon sea salt
¼ teaspoon ground black pepper
½ cup olive oil
¼ teaspoon crushed red pepper flakes
METHOD
Mince the shallot and set aside. In a blender, blend the kumquats, water, juice from orange, and maple syrup until smooth. Scrape down the sides if necessary halfway through the blending process. Add the olive oil, sea salt, pepper and crushed red pepper flakes and blend until well-combined. Remove the dressing mixture from the blender and stir in the shallots. Mix well. Add a drop of water if too thick. Adjust seasoning to taste. Use immediately or store in an airtight glass container for up to one week.
