Layered Chia Seed Pudding Parfait

The superfood version of a neapolitan! Start with this basic chia seed pudding recipe that is loaded with omega-rich fatty acids and a dose of plant-based protein. Then add some flair to this staple by mixing in chocolate (cacao), vanilla, and a mix of berries to create a nutritious and delicious modern layered parfait.

INGREDIENTS

Makes 2 parfaits

½ cup chia seeds
2 cups plant-based milk (almond, cashew, hemp, coconut)
3 tablespoons pure maple syrup
½ teaspoon pure vanilla extract
pinch of sea salt

Additional ingredients

1-2 teaspoons lemon zest
2 teaspoons unsweetened cocoa powder or raw cacao powder
2 teaspoons shredded coconut
⅓ cup mashed raspberries (fresh or frozen)

METHOD

Pour the chia seeds, plant-based milk, maple syrup, vanilla, and sea salt into a bowl and stir until well combined. Allow the mixture to settle for about 20 minutes, whisking every 5 minutes until the pudding thickens. Cover and place the bowl in the refrigerator for at least one hour or overnight.
Once the mixture has thickened, remove it from the refrigerator. Divide the pudding evenly into three separate bowls to create the different variations. Use these suggestions as inspiration to create your own combinations.

Lemony Vanilla Chia Seed Pudding: Add 1-2 teaspoons grated lemon zest. Mix well.
Chocolate Chia Seed Pudding: Add 2 teaspoons unsweetened cocoa powder or raw cacao powder. Mix well. (Adjust to taste.)
Coconut Raspberry Chia Seed Pudding: Add 2 teaspoons shredded coconut and 1/3 cup mashed raspberries (fresh or thawed frozen). Mix well.

Spoon a layer of each flavor into two separate glasses or jars and then top each parfait with fresh berries. Enjoy the chia seed pudding as a breakfast, midday snack, or satisfying dessert!
Store any unused pudding in the refrigerator for up to 3 days.
