Lemony Blueberry Overnight Oats

A good day starts the night before by planning out breakfasts before you go to sleep. The combination of lemon zest, mashed blueberries, and an optional (but highly recommended) chia jam swirl will make any morning both bright and satisfying!

INGREDIENTS

Serves 1

½ cup rolled oats
⅔ cup plant-based milk (coconut milk is my favorite!)
2 to 3 teaspoons chia seeds
½ cup fresh or thawed frozen blueberries
1 teaspoon lemon zest
½ teaspoon vanilla
pinch of sea salt
2 to 3 teaspoons maple syrup (optional)

Topping Ideas: Nut butter, more blueberries, granola, nuts

Easy Chia Jam (optional)

1 cup blueberries, fresh or
1 tablespoon chia seeds
2 teaspoons freshly squeezed lemon juice
2 teaspoons maple syrup (only if needed)

Easy Chia Jam (optional)

METHOD

Place the thawed or fresh blueberries in a bowl and mash. Leave a few chunks for texture. Add all ingredients to a mason jar and stir gently to combine. Cover and place in the refrigerator for at least 3 hours or overnight.

In the morning, taste for desired sweetness and add in sweetener of choice or a swirl of the optional chia seed jam. Top with more fresh blueberries, extra lemon zest + a swirl of cashew butter, nuts, or granola of choice.

To Make the Chia Jam – This recipe can be doubled to have chia jam to use all week!

Add the blueberries to a small saucepan over medium-high heat. If using fresh berries, add a splash of water. Use a spoon or potato masher to lightly mash the berries. Cook for about 8 to 10 minutes or until the blueberries are softened. Turn off the heat and stir in the chia seeds, lemon juice, and maple syrup, if using. Mix well. Allow to cool and thicken then cover and store in an air tight jar in the refrigerator for up to 5 days.
