Lemony Coconut Bliss Balls 

My personal favorite! These tasty sweet & tangy bliss balls are perfect just about anytime you need a boost of energy. With healthy fats from the coconut and cashews plus a dose of plant-based protein, the delicious treats will help keep your blood sugar stable in between meals. Store them in the freezer to have a satiated and & satisfying snack or dessert on hand always!

INGREDIENTS

Makes 20 balls

1 cup cashews
1 packed cup Medjool dates, pitted
½ cup unsweetened shredded coconut, plus more to roll in
1 tablespoon maple syrup
2 tablespoons lemon juice
½ teaspoon vanilla
½ teaspoon sea salt
1 tablespoon lemon zest
Extra coconut for rolling

1 cup cashews
1 packed cup Medjool dates, pitted
½ cup unsweetened shredded coconut, plus more to roll in

½ teaspoon vanilla
½ teaspoon sea salt
1 tablespoon lemon zest

METHOD

Place the cashews in a food processor and pulse until crumbly, but not completely smooth. Next, add remaining ingredients except for the lemon zest. Process until the mixture is well-combined. Add in the zest and pulse for about 30 more seconds until all the ingredients are incorporated. (It will be sticky.) If the mixture is too sticky to handle, place in freezer for about 15-20 minutes until firm enough to roll. Using a small spoon, scoop out the mixture and roll into bite-sized morsels (about 1-inch), forming with your hands! Roll each bliss ball in coconut. Place in the refrigerator for at least an hour before serving. Store any remaining bliss balls in an airtight glass container up to 3 days in the refrigerator or freeze for one month. Enjoy!
