Lil’ Lemon Squares

INGREDIENTS

Makes 40 Mini Squares

1 cup cashews
½ cup walnuts
1½ cups fresh dates, packed & pitted (If dates are not soft, soak in warm water for 5 minutes)
¼ cup unsweetened shredded coconut
3 tablespoons lemon juice
2 teaspoons lemon zest
1½ tablespoons coconut butter, softened (can use coconut oil)
1 teaspoon vanilla extract
¼ teaspoon sea salt
2 tablespoons shredded coconut to top
OPTIONAL: 1 to 2 tablespoons hemps seeds for extra mood-boosting benefits or 1 scoop of protein powder for extra nutrients!

METHOD

Line a 9 x 5-inch loaf pan with parchment or wax paper.

Place the cashew and walnuts in a food processor and process until finely chopped. Add the dates, shredded coconut, lemon juice, zest, softened coconut butter, vanilla, and salt. Process until the dates are finely chopped and blended and the mixture begins to stick together and well-combined.

Transfer the mixture to the lined loaf pan. Use parchment paper or wax paper on top of the bar mixture to pack and flatten the mixture evenly in the pan. Sprinkle with shredded coconut and then cover with the parchment paper. Refrigerate 1 hour or more until firm.

Using the edges of the paper liner, lift the mixture from the pan and uncover. Cut down the center lengthwise and then cut across into 10 large squares. Slice each large square into four little baby bites. Pop one in your mouth whenever you need a quick boost in energy!

Store in the refrigerator up to 5 days or freeze for longer storage.
