Papaya Boats with Lime Chia Pudding

One of the top beauty foods, juicy papayas are packed with nutrients and an abundance of collagen-stimulating vitamin C to keep your skin supple and nourished. For a radiant breakfast or snack, this tropical fruit serves as an edible bowl filled with creamy, lime-scented chia pudding topped with colorful berries and fresh mint.


*Makes 2 servings

INGREDIENTS

1 cup plant-based milk, ideally coconut milk 

1 tablespoon maple syrup, or to taste 

finely grated zest of 1 lime, plus extra for garnish 

½ teaspoon vanilla extract 

pinch of sea salt 

¼ cup chia seeds 

1 medium ripe papaya 

1 lime, cut in half 

1 cup fresh mixed berries 

2 tablespoons roughly chopped fresh mint leaves

INGREDIENTS

1 cup plant-based milk, ideally coconut milk 

1 tablespoon maple syrup, or to taste

¼ cup chia seeds 

1 medium ripe papaya 

1 lime, cut in half 

1 cup fresh mixed berries 

2 tablespoons roughly chopped fresh mint leaves

METHOD

To make the chia seed pudding: In a bowl combine the milk, maple syrup, lime zest, vanilla, and salt. Whisk to blend. Add the chia seeds and whisk until well combined. Cover the bowl or transfer to a mason jar. Refrigerate for at least 3 hours or up to overnight, ideally stirring once after the pudding starts to thicken (after about 2 hours) to help distribute the chia seeds evenly. 

When ready to eat, slice the papaya in half lengthwise, then scoop out and discard the seeds. Squeeze a half of a lime over each papaya half. Stir the chia pudding, then fill the papaya halves with the pudding, dividing it evenly. Top with berries and mint leaves. Grate a little lime zest over the top of each serving. Enjoy!
