Red Velvet Acai Bowl

Acai is a Brazilian fruit that earns the title of “Superfood”.  Aside from being high in antioxidants and loaded with healthy fats, it’s also very low in sugar. The combination of nutrients makes this an excellent choice to stabilize blood sugar while providing sustained energy. The deep berry taste also hosts hints of chocolate, which enhances the red velvet flavors in this delicious & filling bowl. Go for this after a workout for a great recovery meal, first thing in the morning before a busy day, or divide it into two servings and savor as a delicious & nutritious snack.

INGREDIENTS

1 Acai frozen smoothie packet (I use Sambazon.)
6 ounces coconut milk or almond milk
½ cup frozen raspberries
½ large banana, sliced and frozen
1 tablespoon cacao powder or cocoa powder
1-2 tablespoons plant-based protein powder  (Use chocolate flavor for additional chocolate-y taste.)
Optional: a few slices of avocado (extra creamy and filling)

Topping:  any combination of raspberries, banana slices, cacao nibs, coconut, hemp seeds, goji berries

METHOD

Place almond or coconut milk, protein powder, and cocoa in the blender and mix well. Next, add remaining ingredients and blend until thick and creamy. If necessary, slowly add in a small amount of additional plant-based milk to puree all ingredients into a smooth mixture. (The mixture should be thicker than a smoothie and have more of a soft serve ice cream consistency.)

Place in a bowl (or two bowls) and use any combination of toppings. Enjoy immediately!

VARIATION: Use cherries in place of raspberries for a Black Forest Acai Bowl.
