Seeded Overnight Oat Parfait

INGREDIENTS
Makes 2 jars
For the seeded oats:
1 cup old-fashioned oats
1¼ cup plant-based milk (I use the Nutramilk*)
1 tablespoon chia seeds
2 tablespoons yogurt (I use coconut)
1 tablespoon flax seeds
maple syrup to taste
pinch of salt
For the compote:
1 cup frozen raspberries
1 tablespoon lemon or orange juice
splash of water
1 tablespoon chia seeds

METHOD
Add oats, plant-based milk, chia seeds, nut butter, flax seeds, maple syrup and salt to a jar. Mix well and store in the refrigerator for 4 hours or overnight.
Add compote ingredients to a saucepan and bring to a boil. Once boiling, reduce to a simmer for 5-6 minutes until the berries are soft. Turn off heat, stir in chia seeds, and let cool.
In a separate bowl or jar, layer the compote with the seeded oat mixture and top with fresh fruit and more lemon or orange zest. Serve immediately or store in refrigerator for up to 2 days.
