Simple Butternut Squash
This dish is easy to prepare and loaded with nutrients from beta-carotene to potassium to vitamin C. Because it is a rich source of B vitamins, squash is an excellent choice when you are looking for sustained energy. Not a big squash fan? This recipe can also be made with sweet potatoes, yams, or any other root vegetable.

1 medium butternut squash (about 2 pounds)
1 tablespoon olive oil
Salt, pepper, and red pepper flakes to taste

1 medium butternut squash (about 2 pounds)
1 tablespoon olive oil

METHOD
Preheat oven to 400 degrees. Halve the squash lengthwise. Using a spoon, scoop out and discard seeds. Dice squash into bite-sized pieces. Place in a pan and coat evenly with olive and spices. Spread out in a single layer on baking sheet. Roast, tossing occasionally, until just tender and golden brown (approximately 30 minutes).
