Strawberry Shortcake Smoothie
Filled to the brim with antioxidants, a megadose of vitamin C, and unbelievable flavor, this mood-boosting smoothie will satisfy a sweet tooth AND keep blood sugar stable all morning long. A family fave that is an energizing way to start the day!
INGREDIENTS
1 cup DIY cashew milk (coconut milk works too)
2 tablespoons raw cashews (soaked for about 30 minutes)
1¼ cups frozen strawberries (or use any berry combination)
½ banana, sliced & frozen
¼ avocado
½ cup frozen cauliflower (optional for added nutrients and creaminess)
½ teaspoon vanilla (skip if using protein)
1 teaspoon lemon zest (don’t skip this!)
Pinch of sea salt
1 scoop vanilla plant-based protein (optional)
ADD INS:
Tocos (good for skin)
Ashwagandha (adaptogen great for stress support)
Hemp seeds and/or flax seeds (Omega fatty acids)
NOTE: To make a smoothie bowl with toppings use a little less liquid for a thicker consistency.

METHOD
Blend the cashews and the cashew milk in a high speed blender until smooth. Add in remaining ingredients and blend until a creamy consistency is reached. Add in additional nut milk if necessary. Enjoy the pretty in pink smoothie!
