Tahini Toast

How about this play on a classic PB & J?! All the flavors of our favorite childhood sandwich but with a superfood twist: creamy, calcium-rich tahini, chia seed jam + toasted coconut and cacao nibs on top! The idea came from my older son Noah, which makes it taste better, of course!

INGREDIENTS

Serves 2

2 slices whole grain, sprouted, or grain-free bread
2 tablespoons tahini
2 tablespoons chia seed jam (get the simple and easy to make recipe here)
2 tablespoons coconut, toasted
1 tablespoon cacao nibs
Pinch of sea salt
Toppings: fresh berries, sliced apples, sliced figs, sliced pears, or sliced banana

METHOD

Toast the bread until golden brown around the edges. Slather the tahini while the toast is still warm. Spread the chia jam and sprinkle with sea salt, coconut, and cacao nibs. Add sliced fruit of choice. Simple and delicious!
