Warm Chia Pudding

Satisfy a sweet tooth AND soothe your body with a warm superfood packed chia seed pudding that’s energizing & filling any time of day. Loaded with healing spices, protein, and omega fatty acids, this nutrient-dense dish couldn’t be any easier to make…or eat!

INGREDIENTS

Serves 1-2

2 teaspoons coconut oil
¼ cup chia seeds
1 cup plant-based milk (almond, cashew, hemp, coconut)
¼ teaspoon cinnamon
1 teaspoon freshly grated ginger or ¼ teaspoon ground ginger
½ teaspoon pure vanilla extract
pinch of sea salt
1 tablespoon pure maple syrup (use any sweetener of choice to taste)

Mix & Match Add Ins

pinch of cardamom
2-3 teaspoons lemon zest, orange zest or lime zest
Matcha green tea powder
2 tablespoons raw cacao or unsweetened cocoa powder

Toppings

fresh fruit
sautéed bananas or apple slices
nuts
granola
edible flowers
coconut
cinnamon

METHOD

Add the coconut oil to a medium-sized pot over medium heat. Once the oil has melted, pour the nut milk and chia seeds into the pot. Continuously stir for 4-5 minutes or until the mixture thickens and the chia seeds are soft, not crunchy. Remove from heat and add in the spices, sea salt, and vanilla. Mix in sweetener of choice to taste. Check for desired thickness. Adjust if needed with additional nut milk. Stir again and then pour the pudding into a bowl. Top with colorful and nutrient-dense ingredients. Enjoy as breakfast, a midday snack, or satisfying dessert!
