Watermelon Pizza

A fun, flavorful, and hydrating way to sneak in those fruits and veggies—WATERMELON PIZZA! This easy to make and nutrient-dense dish doesn’t even require an oven. Use these suggestions as inspiration to get creative with your summer pie. Go for a sweeter version by adding fruit, coconut, and a yogurt sauce. Or slather on the savory toppings with a drizzle of balsamic! Any way you slice it, watermelon “pizza” can’t be topped!

INGREDIENTS

Serves 4-6

1 large chilled watermelon

Sweet topping ideas:
sliced peaches or nectarines
blueberries, raspberries, strawberries, and/or blackberries
sliced kiwi
sliced banana
shredded coconut or coconut flakes
Greek yogurt or non-dairy yogurt
sliced nuts (almonds, pecans, cashews)
seeds (hemp or flax)
mint leaves (highly recommended!)
squeeze of lime

METHOD

Chill watermelon. Then slice the melon into roughly one-inch thick rounds. Add all the fixings using the topping ideas from above or put your own creative spin on it. Then, simply slice into wedges and serve. It’s that easy!
