Zesty Chia Seed Pudding
There’s a reason why chia seeds are considered a superfood: They are loaded with nutrients that can help calm the mind + body, increase energy, and stabilize mood. Toss in citrus to give it a zesty kick plus a scent that is known to relieve stress!
INGREDIENTS
Serves 2
1 cup coconut milk (or your favorite plant-based milk)
½ teaspoon vanilla
2 tablespoons maple syrup
2 teaspoons lime zest (plus extra to finish)
Pinch of salt
¼ cup chia seeds (I use Navitas Organic Chia Seeds)
Toppings:
Fresh berries
Figs
Pistachios (or any nuts)
Extra lime zest

METHOD
In a small bowl, add coconut milk, vanilla, maple syrup, lime zest, and pinch of salt, then whisk to combine. Mix in the chia seeds and whisk until smooth. Cover or pour into a mason jar and let sit in the refrigerator overnight or for at least three hours. Top with berries, figs, nuts, additional lime zest, or whatever your creative heart desires. Grab a spoon and feel good from the inside out!
Store remaining chia pudding the refrigerator for up to 3 days.
